Cajun Spiced Chicken Breast with Peach Chutney

Cajun chicken breast topped with a chutney of fresh peaches simmered with orange juice, sherry vinegar, cinnamon, roasted peppers and onions

Ingredients:
6 Boneless Skinless Chicken Breast
1 Tablespoon Vegetable Oil
1/4 cup Cajun Seasoning
1 ounce Red Onions, Fresh  (diced 1/2")
1 1/2 teaspoon Garlic, Fresh  (minced)
1 Tablespoon Olive Oil
3 cups Peaches, sliced3 cups
1/2 cup Fresh Squeezed Orange Juice
1/4 cup Sherry Wine Vinegar
1/4 Teaspoon Ground Cloves
1/4 Teaspoon Ground Bay Leaves
1/4 Teaspoon Crushed Red Pepper, Dried
1 Teaspoon Ground Cinnamon
1/8 Teaspoon Salt
1/8 Teaspoon Ground White Pepper
1/4 Cup Light Brown Sugar
1/2 cup Roasted Sweet Red Peppers DRAINED, DICED 1/4" 
1 teaspoon Fresh Grated Orange Rind
 

Coat chicken breasts in Cajun seasoning. Saute chicken in oil until juices run clear or to internal temperature of 165 degrees. In a separate pan, saute onion and garlic in oil. Add peaches. Continue to saute until tender. Deglaze pan with orange juice and vinegar. Add cloves, bay leaves, red pepper, cinnamon, salt and white pepper. Bring to a boil. Add brown sugar. Reduce heat. Simmer until peaches are glazed. Before serving, stir in roasted peppers and orange rind. Serve chutney over top of Cajun spiced chicken breasts.
