Vegetarian Pasta Saute
Ingredients:
2 teaspoons olive oil
1 minced clove of garlic
1 large red onion, sliced
2 medium zucchini, sliced
2 medium summer squash, sliced
1 red pepper, sliced
½ cup cherry tomatoes
Fresh ground pepper to taste
Salt (if desired)
Crushed red pepper (if desired)
1/2 cup Parmesan cheese
3 cups pasta
Heat olive oil in a large skillet. Lightly saute garlic for 1 minute. Add onion, zucchini, squash, cherry tomatoes and red pepper. Cook al dente. Add seasonings and lightly toss. Serve over pasta that has been cooked al dente. Top with grated Parmesan cheese. This is a family favorite! (Can also be used as a vegetable side dish.)
